Enjoy Christmas with Chili Con Carne

Christmas is the time to celebrate. It should be celebrated with all fun
and enjoyment. It is a joyful time where one forgets all the tensions and
thus enjoys the day to the fullest. The extra pressure that one sometimes
feels due to the season it adds more and more joy and this season makes
them feel overwhelmed. Given below is a recipe for that one could enjoy in
the festive season.

Chili Con Carne: This dish serves around six to eight people. The
ingredients are as follows:

1)100 gm pancetta that is sliced

2) 2 tablespoons of olive oil

3) butter- 85 grams

4) Medium sized onions-2 .The onions should be chopped

5) Chopped carrots-2

6) Garlic cloves-2

7) Red chillies-2

8) Red chili powder- half tablespoon

9) Beef mince -1 kilograms

10) Red wine- 150 milliliters

11) Tomato puree- 3 tablespoon

12) Kidney beans- 400 grams

13) Beef stock – 300 milliliters

14) Cheese – grated (for serving)

15) Chips (for serving)

16) Cream

17) Guacamole

How to prepare Chili Con Carne

Firstly one should grind the pancetta completely with the help of a food
processor or a grinder. It should be made sure that the pancetta is
completely grinded and not even small pieces of pancetta are visible.

Heat two table spoons of olive oil in a pan. Then add the grinded pancetta
and around two-third of the butter into the pan. Cook the pancetta for
around five minutes on a slow flame till the pancetta turns light brown.

After the pancetta is cooked one should the butter that is left that is to
say one third of the butter to the pan. Then add chopped onions, grated
carrots, and nicely minced garlic. Cook it for 2 minutes.

After that add red chilies & then add red chili powder to the mixture.
Stir everything properly and then cover the pan. Cook it on a low flame
for around ten minutes.

Now add the mince to the above mixture. Keep stirring it till the mince is
completely broken up into pieces and even becomes a little brown.

Now add red wine to the pan. Now slightly increase the flame. Cook it with
red wine for another ten minutes.

Now add the kidney beans, the puree and around two third of beef stock to
the pan. Boil it for around ten minutes till a little boil is see
observed.

Now the pan should be partially covered and heated for around one and a
half hour. It should be stirred gently after every fifteen minutes.

Once one sees a little dryness in the pan, add the left one third stock also.

After the chili con carne gets cooked completely add a little grated
mature cheddar. Then to give it a more pleasing look serve it with some
tortilla chips, guacamole and to add to the taste a little soured cream.

Thus chili con carne is ready to be served.
